Aubergine is one of the best vegetables to tempura. It just works so well. The beautifully light yet crispy tempura batter paired with the soba (buckwheat) noodles and warm soy dashi broth gets anyone moaning with delight.
Toppings: spring onion; shichimi (Japanese 7-spice).

All the fresh ingredients have been sourced from Japan, Billingsgate Fish Market, Smithfields Meat Market and New Covent Garden Market.
